Bacon Wrapped Scallops with

Sweet Lavender Remoulade

Yield: 4-6 Servings

2 Lbs. Sea Scallops

8-10 Slices Smoked Bacon, Cut in Half

Juice of 1 Lemon

2 Cups Sweet Lavender Remoulade

This recipe is one example of taking a recipe from good to delectable; from "hmm" to "Aha!" It is simple to make, especially because we use a remoulade that we have on hand. You will find that remoulades are an easy and delicious way to add layers of flavor to some of your simplest recipes.

Wash and dry scallops. Wrap each with a piece of bacon and secure with a toothpick.

Preheat grill to medium high. Grill wrapped scallops for 2-3 minutes on each side, until scallops are cooked through and bacon has browned. Remove from heat, cool slightly, and serve on a platter with remoulade on the side.

White Peppercorns
The pepper of choice in
most European kitchens,
white peppercorns are released
from their outer black shell by soaking. The process results in a more mellow taste than that of black pepper. And the creamy color works perfectly in recipes that are lighter in color.
