Casablanca Tomato Jam
Yield: 4 Half Pint Jars
6 Cups Cored and Chopped Vine Ripened Tomatoes
2 ½ Cups Organic Cane Sugar
1 Tablespoon Casablanca Seasoning
1 Tablespoon Seville Orange Peel
¼ Cup Fresh Lime Juice
1 Teaspoon Hawaiian Alaea Salt
1 Teaspoon Unsalted Butter
2 Teaspoons Citric Acid (Optional)
2 Tablespoons Powdered Pectin (Optional)
In our kitchen we’ve come to depend upon our homemade Tomato Jam as a condiment. We use it so frequently – and so successfully – that we decided to create more of the jams, but with different flavor profiles. This one packs a real punch, and is perfect for things like tacos, dipping sauces. No matter how you use it, it will add a layer of flavor that will impress even the most accomplished home chefs in your crowd. After you've tried our Casablanca version, you may want to substitute one of our other seasoning blends - like Napa Syle, Heartland, Classic Bistro, or Country French - to create your own favorite version of this classic.
You can freeze this jam, or else process it in a water bath.
Combine tomatoes, sugar, seasoning, orange peel, lime juice, salt, and butter in a large sauce pan placed over medium high heat. Once the tomatoes have released their juices, reduce heat to medium and simmer, stirring occasionally, until the mixture has reached the consistency of a jam.
If you are planning to process in a hot water bath, add pectin, stir until well combined, and simmer for an additional minute. Add citric acid and remove from heat. Process according to manufacturer’s instructions.
If you prefer to freeze your jam, let it cool completely before placing in freezer-safe containers.
