Country French Pea Soup
Yield: 8-12 Servings

1 Cup Diced Sweet Onion
2 Tablespoons Butter
1 Tablespoon Olive Oil
½ Teaspoon French Grey Salt
1 Cup Chardonnay or Other Dry White Wine
6 Cups Fresh or Frozen Peas
8 Cups Low Sodium Chicken Stock
2 Tablespoons Country French Seasoning
1/2 Cup Heavy Cream (Optional)
Parsley or Chives for Garnish
We grow a lot of fresh peas in our garden every year, and this is one of our favorite things to make with them. If you don’t have a garden, the recipe works very well with frozen peas, too. Either way, the flavor in this soup is, quite simply, spectacular! It will convince your guests that you are a genius in the kitchen. But take heart! You don’t need to be a genius to make this, because with our Country French Seasoning Blend, this recipe is as easy to make as it is delicious! And it freezes well. So plan to make a large batch and freeze what you don’t use immediately.
Place butter and olive oil in a large saucepan placed over medium heat. Add onions and salt, and saute, stirring frequently, until the onions are transparent.
Add wine, peas, chicken stock, and seasoning blend to the onions. Bring mixture to a simmer and cook, stirring occasionally, for 40-45 minutes. Remove from heat and blend until smooth with an immersion blender.
If you prefer a more artisanal look and taste, ladle soup at this point into bowls, garnish with parsley or chives, and serve. If you prefer a more refined look and creamy taste, add heavy cream to the finished soup and heat over medium low heat for 10-15 minutes until warm. Ladle into bowls, garnish, and serve.
