Country French Vinaigrette
Yield: ¾ Cup
½ Cup Extra Virgin Olive Oil
3-4 Tablespoons Champagne Vinegar
1 Teaspoon Dijon Mustard
1 ½ - 2 Teaspoons Country French Seasoning
1/2 Teaspoon Lavender Sea Salt
Pinch Cracked Green Peppercorns
Vinaigrettes are a wonderful way to add layers of flavor to even the most ordinary meal. We have several on hand all the time to use as condiments as much as salad dressings. We created this one to complement our Roasted French Breakfast Radishes. While they are delicious, and a special treat all by themselves, the addition of this Country FrenchVinaigrette puts them off the charts in terms of flavor and presentation. But don’t limit yourself by saving this for the radishes. This works well with chicken and seafood – and of course, salads!
Place olive oil, 3 tablespoons vinegar, 1½ teaspoon seasoning blend, salt, and pepper in a small bowl. Whisk together and taste for seasonings. If you would like a more acidic vinaigrette, add another tablespoon of vinegar. If you feel you would like more of an herbal flare, add remainder of herbs, or more salt and pepper, as you desire.
Refrigerate and allow vinaigrette to season before serving. Whisk again just before serving.
