This recipe for baked beans is one of our signature dishes. People from far and wide have come to expect them at certain times throughout the year when we are gathered around the picnic table. We have included carrots in our version because we love the added color, texture, and sweetness they add to the recipe.
Mix all ingredients in a large bowl. Stir to ensure that mixture is well combined. Pour into a Dutch oven or large covered casserole and refrigerate overnight.
In the morning, preheat oven to 275 degrees. Place beans on center rack in oven and bake for 6 hours. Remove top, increase heat to 325 degrees, and bake for another hour. If the beans appear dry, add a little more water at this point.
Remove from oven, stir, and allow to stand for 15 minutes before serving.
