Quick Lemon Grove Sauce and Marinade

Yield: ½ Cup

3 Tablespoons Lemon Grove Seasoning

3 Tablespoons Olive Oil

1 Tablespoon Water

1/2 Teaspoon French Grey Salt

1/2 Teaspoon Green Peppercorns

1 Teaspoon Fresh Lemon Juice (Optional)

Pinch Red Pepper Flakes (Optional)

This sauce quickly became one of our signature recipes. It has the same character as pesto and chimichurri, but with a brighter, slightly tangy  flavor profile that is well suited to shellfish and other seafoods. It makes a great dipping sauce for grilled or steamed shrimp, a drizzle on top of grilled scallops, or a marinade for white fish like Lake Superior or Mahi Mahi. We keep it on hand at the farm to use as is, or to create a compound butter or aoli.

Place all ingredients in a small mixing bowl. Whisk to combine, cover and refrigerate until ready for use. This sauce will stay fresh in the refrigerator for 1-2 weeks

Green peppercorns are
harvested from the pepper vine
before the berries have reached their full maturity, resulting in a zestier flavor than that of black or white peppercorns. Chefs use them when they are seeking a lighter, cleaner, and fresher taste from their pepper.
