Maple Bacon, Cheddar, & Apple Scones

Yield: 8 Scones

1 Stick Unsalted Butter

2 Cups All Purpose Flour

1 Tablespoon Baking Powder

1 Teaspoon French Grey Salt

1/2 Teaspoon Ground Tellicherry Pepper

3 Tablespoons Vermont Maple Sugar

2 1/2 Teaspoon Apple Pie Spice

6 Slices Applewood Smoked Bacon

1 Medium Granny Smith Apple, 1/4" Diced

1 1/2 Cup Grated Vermont Cheddar Cheese

1 Cup Sour Cream

1 Egg Yolk

2 Tablespoons Pure Maple Syrup

1 Tablespoons Heavy Cream

2 Tablespoons Pure Maple Syrup

These scones are a real hit for breakfast. Hearty and delicious, all you need is a glass of orange juice and a cup of coffee to get your day off to a great start. Around the holidays, we make several batches of this dough, then cut and freeze it to pull out and bake when friends stop by unexpectedly. Make sure to use a premium applewood smoked bacon in this recipe. Any other bacon just doesn't live up to this beautiful scone! 

 

Cut butter into small cubes and place in refrigerator to keep chilled before using.

 

Preheat the oven to 425 degrees.  Line a baking sheet with parchment paper or a silicone baking mat.

Cook bacon until crispy. Drain and allow to cool slightly, then crumble and set aside. 

 

Place the flour, baking powder, salt, pepper, maple sugar, and apple pie spice in bowl of food processor. Pulse 3-4 times to blend completely. Add chilled butter to the bowl and pulse mixture until butter takes on the consistency of gravel or peas. Transfer mixture to a medium mixing bowl.

 

Make a well in the middle and add the sour cream and egg yolk.  Use a wooden spoon to stir mixture until well combined. Add bacon, cheese, and apples to the mixture. Use your fingers to mix gently, until just combined. 

 

Move dough to a lightly floured surface and knead gently 6-8 times, folding in half each time. Pat dough into an 8” disk, wrap in plastic, and place in refrigerator for 15-20 minutes. Remove dough from refrigerator and cut into 8 wedges. Place wedges ½ apart on baking sheet. 

In a small bowl, mix cream with maple syrup. Brush on tops of wedges.

 

Place on center rack in oven and bake for 18-20 minutes until tops of scones are golden. Remove from oven, place scones on a baking rack and cool slightly. Meanwhile, mix together maple syrup and cream and drizzle over top to glaze. 

 

Note: this dough for scones freezes well. Complete recipe to the point of baking; wrap tightly in plastic wrap and freeze. When ready to use, take scones from freezer and allow to defrost for 5-10 minutes. Place on baking sheet and bake for 20-23 minutes until done.
