Pacific Coast Planked Salmon
1 Large Salmon Filet
3 Tablespoons Whole Grain Mustard
3 Tablespoons Pacific Coast Seasoning
When you serve this dish, your guests will believe you’ve spent hours in the kitchen. The flavor belies how simple it really is to prepare. While we’ve given the recipe here for planked salmon (you can use cedar, hickory, or any plank you desire), you can also grill or pan sear your fish and finish it off in the oven. We like to finish off the presentation with one of our fruit salsas, like strawberry, blackberry-mango, or blueberry- peach – depending on the season. PS - this recipe works just as well with halibut!
Place wood plank in cold water and let stand for 2 hours. Meanwhile, cut filets into serving size pieces and brush tops with mustard. Sprinkle each liberally with seasoning blend. Let stand for 30 minutes before grilling.
Heat grill to medium high. Place salmon on planks. Cook on covered grill for 13-15 minutes, until a meat thermometer reads 135 degrees. Remove from heat and let stand for 10 minutes before serving.
To serve, gently remove skins from the salmon. Place on a serving platter, sprinkle with fresh lemon juice and a slice of grilled lemon on each piece.
