 Romesco Cheddar Cheese Ball

4 Cups Shredded Sharp Cheddar Cheese

4 Oz. Cream Cheese, Room Temperature

2 Cups Casablanca Style Romesco Sauce

1/2 Teaspoon Alderwood Smoked Sea Salt

1/2 Teaspoon Ground Pink Peppercorns

1 1/2 Cups Sliced Almonds, Roasted

Sometimes, no matter how hard you might work to impress your guests, the old standbys end up being the hit of any party. That's how we feel about our Romesco Cheddar Cheese Ball. OK, we just couldn't help ourselves - we had to tamper a little with our old recipe to give it a new life. We took our old (as in decades!) recipe for the classic and kicked it up with our Casablanca Romesco Sauce. We think the results are pretty stunning, and we're confident your guests will agree.

Place all ingredients except sliced almonds in bowl of food processor. Pulse several times until mixture is well combined. Remove from bowl and roll mixture into a ball. Coat with roasted almonds, cover tightly and refrigerate for several hours before serving. Serve with crackers or crostini.

Casablanca Seasoning

Adapted for Home Chefs

from  the North African

Classic Harissa. Complex, fiery

hot, and spicy, Casablanca our version of the versatile North African blend used to season meats, poultry, couscous, legumes, soups, and stews. When blended with olive oil, it also makes a flavorful paste and condiment.

Alderwood Smoked
Sea Salt
Slowly smoked over
Alaskan Alderwood, this
finishing salt adds an exquisite, smoky touch to grilled meats, vegetables, potatoes, salad - and even desserts. Simply sprinkle a little on top before serving.

Pink Peppercorns
While they have a fresh,
peppery flavor, pink
peppercorns are not pepper.
They are the fruit of a Brazilian tree that is part of the cashew/mango family. Their sweet, mild flavor works well in delicate sauces, as well as in seafood and poultry dishes. Crush with a mortar and pestle.
