It's Mardi Gras!
At MorningStar Kitchen we love this time of year. That’s because it’s Mardi Gras. And to us, Mardi Gras means one thing: JAMBALAYA!
From a personal perspective Jambalaya is my all-time favorite recipe. Call me crazy, but to me it’s better than triple fudge brownies, butterscotch sundaes, or chocolate truffles. It’s better than beef tenderloin or turkey with all the trimmings And that’s saying a lot, because I love all of those things too.
Jambalaya is my favorite dish is because it has character. The colors. The texture (today some would call it ‘mouth feel’). And most of all, the flavor! Add them all together and you’ve got one perfect dish. A dish with real character.
Let’s start with the ingredients. There are some essentials here, rice being the first. Then the farm fresh vegetables:
Onions, celery, and bell peppers - a.k.a. ‘the Trinity.’ Sometimes I also add grape tomatoes and corn.
Now add meat: any assortment of smoked sausage or andouille, chicken, and shrimp. With this list of ingredients, you can see where we’re going in the direction of colors and texture; and you may even begin to taste the incredible flavor. Or at least the early stages of the flavor as it develops.
Ahh, the flavor! That’s the most amazing thing of all. This dish has a distinct flavor all its own. Distinctly Louisiana; distinctly Cajun. Distinctly Jambalaya! At MorningStar Kitchen we developed our own City of New Orleans Seasoning, just for this recipe. We complement it with by our French Curry, to create the flavor, the real character of the dish.
Our seasonings are what turn a mixture of rice, meats, and vegetables into a culinary masterpiece. And as with any masterpiece, it has a distinctive character of its own. Around here, we call that character “Mardi Gras!”
