Strawberry Lavender Jam

Yield: 7-8 Half Pint Jars

6 Cups Fresh Crushed Strawberries

5 ½ Cups Organic Cane Sugar

¼  Cup Rose’ Wine

2 Tablespoons Lavender Buds

1 Teaspoon Unsalted Butter

1 Packet Powdered Fruit Pectin

1/2 Teaspoon French Grey Sea Salt 

1/2 Teaspoon Ground Pink Peppercorns 

You never knew jam could taste this great! Over and over again we’ve heard these very words  as our friends and guests have tried this jam for the first time. We’re convinced the same will happen in your kitchen. Your guests may even try to guess what specialty store you found it in, because they probably won’t believe something that tastes this spectacular could come from someone’s own personal kitchen!

 

Combine strawberries, wine, lavender, butter, and pectin in a large, non-reactive pan. Stirring constantly, bring mixture to a full rolling boil. This is the point at which the mixture does not stop boiling while you are still stirring.

 

Add sugar and return to a full rolling boil for 1 minute. Remove from heat, and process in hot water bath (see jar manufacturer’s instructions), or let cool completely, divide into freezer safe containers, and freeze.
